This draft Mexican Official Standard establishes the trade descriptions of the different types of ham marketed within the territory of the United Mexican States, as well as the physical and chemical specifications that such products must meet in order to display such descriptions, the test methods used to prove their compliance and the commercial information that must be shown on the product containers. This draft Mexican Official Standard is applicable to all cured and/or cooked and/or smoked and/or aged meat products marketed within the territory of the United Mexican States under the trade description "ham" (jamón).
